Abdal Simit Fırını | Traditional Bursa simit and artisan bakery

Tuzpazarı, 12. Fırın Sk. No:2, 16020 Osmangazi̇/Bursa, Türkiye

Abdal Simit Fırını is one of the most prominent culinary heritage spots in Bursa, preserving centuries-old baking traditions through authentic wood-fired production. The historical roots of the bakery site date back centuries; 16th-century Ottoman annals mention an active bakery directly opposite the Abdal Mehmet Tomb, along the bustling Silk Road where merchants and travelers once rested. While the site originally baked classic loaves of bread in antiquity, it became widely known for its specialty ring-shaped bread in modern times.

The current lineage of the bakery began in 1969 when Resul Şahin introduced traditional Turkish sesame bagels, known as simit, baked strictly over wood fire. Following his father’s dedication to service and craftsmanship, Güray Şahin took over the operations and maintained the artisanal methods. Following a major municipal urban renewal project initiated in 2007 by the Osmangazi Municipality, the bakery reopened in 2011, housing the historic brick oven tradition in an updated square environment while keeping its authentic baking philosophy intact.

Operating with official food production approvals and trademark registration, the bakery is a staple destination for local residents as well as domestic and international tourists visiting Bursa’s historic quarter. Its signature wood-fired baked specialties include:

• Famous Abdal simit
• Bursa-style tahini flatbread (tahinli pide)
• Traditional walnut rolls (cevizli lokum)
• Fresh savory pastries and börek varieties

Located in the Tuzpazarı neighborhood of Osmangazi, Abdal Simit Fırını continues to serve hot, freshly baked delicacies directly from the wood-burning stone oven, preserving the distinct culinary memory of Bursa for new generations of visitors and food enthusiasts alike.
