The Secret Behind the Flavor: Divle Obruk Mağarası

Located in southern Türkiye, this natural cave plays a crucial role in shaping the identity of Divle Obruk Cheese. With a depth of approximately 36 meters and a length of around 250 meters, the cave maintains a stable cool temperature and humidity levels ranging between 90% and 100% throughout the year.

This unique microclimate creates ideal conditions for natural fermentation. The cave’s endemic bacterial flora interacts with the cheese during aging, resulting in its signature reddish rind and rich, layered taste.

Recognized with geographical indication status, Divle Obruk Cheese is often referred to as the “Turkish Roquefort,” yet it remains entirely unique in character. Today, both production and traditional knowledge continue to be preserved and passed down through generations.
